Simple Corn with Chili and Lime

  • 8 ears corn
  • 4 tablespoons piquín chile
  • 4 limes
  • 1/2 cups mayonnaise, fresh
  • 1 cup queso fresco

  • Prepare the grill over medium heat.
  • Take the corn and open the husks, season the corn with salt and pepper, remove the brown threads, and close the husks again.
  • Grill the corn until well cooked (approximately 10 minutes).
  • Let the corn cool for at least 10 minutes.
  • Prepare glass plates with different ingredients to season the corn, one with cut limes, another with mayonnaise, another with cheese, and another with chili piquín.
