Spinach Puree

This spinach puree is perfect to accompany any dish. It is also ideal for children; they will love it.

  • 4 cups spinach
  • 2 tablespoons butter spray, or margarine spray
  • 2 tablespoons low-fat sour cream
  • pepper
  • 1/2 cups water

  • Put half a cup of water in a large pot and cover until boiling. Add a little powdered broth if desired.
  • In that pot, add the spinach to steam. Cook for 4 minutes.
  • Puree in a processor, adding the butter spray and light cream. Add salt and pepper to taste.
