2 Poblano chiles, for filling
250 grams shrimp
Manchego cheese
cream cheese
sour cream
mayonnaise
salsas, or chipotle cream

Remove the stems from the chiles and open them on one side.
Put the deveined, cleaned, cooked shrimp without heads and tails into the food processor until they resemble ground meat.
Mix the shrimp with mayonnaise and chipotle; you can use mayonnaise with chipotle.
Stuff the chiles.
Place a thin slice of manchego cheese and cream cheese on top.
Put them in the microwave for about one to one and a half minutes.
Add cream over the chiles.
