Stuffed Zucchini

Delicious stuffed zucchini with tomato and corn. They make a great main dish or can also be prepared as a side for chicken, meat, or fish dishes. They are simply delightful.

  • 4 zucchinis, creole
  • 1/2 tablespoons vegetable oil
  • 1 clove garlic
  • 2 tomatoes, seedless, in cubes
  • 1/4 cups corn kernels
  • 1 pinch dried oregano
  • 1/2 tablespoons butter
  • salt and pepper

  • Cut the base and the top of the zucchini and remove the pulp with the help of a small spoon.
  • In a microwave-safe pot, place oil, finely chopped garlic, tomato, and the pulp of the zucchini.
  • Season with salt and pepper, sprinkle the oregano. Cook for 3 minutes.
  • Grease a small baking dish with butter and distribute the zucchini, season with a little salt, and cover them.
  • Cook at medium level for 4 minutes, remove from the oven and fill with the tomato mixture.
  • Return to the oven and cook for 3 more minutes.
