Exquisite zucchini stuffed with tomato and corn. They are a very good main course or you can also prepare them as a garnish for some other dish based on chicken, meat or fish. They are simply delicious.

Ingredients

4 portions
  • 4 zucchini, Creoles
  • 1/2 tablespoons oil
  • 1 clove garlic
  • 2 tomatoes, seedless, cubed
  • 1/4 cups corn grain
  • 1 pinch dried oregano
  • 1/2 tablespoons butter
  • salt and pepper

Preparation

Cut the base and the lid of the zucchini and remove the pulp with the help of a small spoon.
In a microwave-safe saucepan place oil, finely chopped garlic, tomato and zucchini pulp.
Season with salt and pepper, sprinkle with oregano. Cook for 3 minutes.
Grease a small baking dish with the butter and distribute the zucchini, season with a little salt and cover.
Cook on a medium level for 4 minutes, remove from the oven and fill with the tomato mixture.
Return to the oven and cook for 3 more minutes.
