Black Bean Soup

Black beans are typical in Mexican cuisine, especially in the Veracruz region. A black bean soup is an ideal starter to begin a meal.

  • 2 tomatoes, medium
  • 1/2 onions
  • 1 clove garlic, small
  • 3 tablespoons corn oil
  • 2 tablespoons chicken bullion
  • 3 cups black beans, cooked
  • 6 cups broth where the beans were cooked
  • pepper, to taste
  • panela cheese, diced (for serving)

  • Blend the tomatoes, onion, and garlic. Strain and sauté with corn oil until well seasoned. Add the ground beans with their broth, chicken bouillon powder, and salt to taste.
  • Let it simmer for 10 minutes and serve accompanied by the diced panela cheese.
