1/2 sticks butter
1 shallot, mashed
1/2 tablespoons guajillo chile
1/4 cups flour
3 cups chicken broth, natural or canned
2 cups sour cream
300 grams Brie cheese
1 bunch chives, finely chopped
1 cup champagne
pepper, to taste
salt, to taste

In a large pot, melt the butter over low heat.
Add the shallots and the chili and cook until golden.
Add the flour and cook for 1 more minute.
With a whisk, mix the butter while adding the cream and chicken broth.
Increase the heat to medium and continue cooking until it begins to boil. Lower the heat and cook for 5 more minutes.
Add the Brie, scallions, salt, and pepper, and mix until fully dissolved in the soup. Add the champagne.
Remove from heat and serve immediately.
