Brie Cheese and Champagne Cream

A delicious cream for special occasions. With a light base, it combines Brie cheese, cream, and champagne to achieve a wonderful recipe.

  • 1/2 sticks butter
  • 1 shallot, mashed
  • 1/2 tablespoons guajillo chile
  • 1/4 cups flour
  • 3 cups chicken broth, natural or canned
  • 2 cups sour cream
  • 300 grams Brie cheese
  • 1 bunch chives, finely chopped
  • 1 cup champagne
  • pepper, to taste
  • salt, to taste

  • In a large pot, melt the butter over low heat.
  • Add the shallots and the chili and cook until golden.
  • Add the flour and cook for 1 more minute.
  • With a whisk, mix the butter while adding the cream and chicken broth.
  • Increase the heat to medium and continue cooking until it begins to boil. Lower the heat and cook for 5 more minutes.
  • Add the Brie, scallions, salt, and pepper, and mix until fully dissolved in the soup. Add the champagne.
  • Remove from heat and serve immediately.
