Chard and Vegetable Soup

  • 1 tablespoon olive oil
  • 1/4 cups onion, finely chopped
  • 1 cup chayote, peeled, in medium cubes
  • 1 cup white cabbage, cut into strips
  • 2 cups chard, only leaves, cut into strips
  • 1 cup carrot, peeled, in small cubes, precooked
  • 6 cups chicken broth
  • 1/4 bunches cilantro
  • 3 sprigs dried thyme, preferably
  • salt
  • pepper
  • avocado, in cubes, to accompany

  • Heat a little olive oil in a pot and sauté the onion over medium heat until it slightly changes color, then add the chayote, white cabbage, and chard and sauté for 4 more minutes, stirring constantly until the volume of the leaves decreases.
  • Add the precooked carrots and pour in the chicken broth, cilantro, thyme, enough salt and pepper. Cook over medium heat for 12 minutes.
  • Serve the chard soup accompanied by avocado.
