Dairy-Free Asparagus Cream

  • 2 cups asparagus
  • 1/4 onions, cut into cubes
  • 4 cups vegetable broth

  • In a pan over medium heat, heat the olive oil, add the potato, and cook for 5 minutes until soft.
  • Add the asparagus, garlic, onion, and cook for 5 more minutes.
  • Blend for 3 minutes with vegetable broth.
  • In a pot over low heat, heat the oil, pour in the previous mixture, season with salt and pepper, and cook for 10 minutes until slightly thickened.
  • Serve hot accompanied by croutons and asparagus.
