Light Carrot Cream

This carrot cream is so full of flavor that it will become your favorite soup! Plus, with Silk, you have an excellent alternative to plant-based milk, as it contains no sugar and provides all the nutrients and vitamins you need in your daily life.

  • 2 tablespoons butter
  • 2 tablespoons shallot, finely chopped
  • 1 cup leek, in pieces
  • 1 tablespoon garlic, finely chopped
  • 1 teaspoon curry
  • 4 carrots, peeled and cut into quarters
  • 4 cups Silk® almond without sugar
  • salt

Low
  • Melt the butter in a saucepan over medium heat and sauté the shallot, leek, and garlic until softened and slightly colored.
  • Add the curry and carrots, continue cooking until the carrots soften slightly, then add Silk® unsweetened almond milk, salt, and pepper. Cook on low heat for 15 minutes, let cool, and set aside.
  • Blend for 3 minutes or until a smooth and homogeneous consistency is achieved. Set aside.
  • Pour the previous preparation into a medium pot, add the thyme, and continue cooking for 10 minutes.
  • Serve the light carrot cream in a deep plate, garnish with sour cream and accompanied by croutons.
