Melt the butter in a saucepan over medium heat and sauté the shallot, leek, and garlic until softened and slightly colored.
Add the curry and carrots, continue cooking until the carrots soften slightly, then add Silk® unsweetened almond milk, salt, and pepper. Cook on low heat for 15 minutes, let cool, and set aside.
Blend for 3 minutes or until a smooth and homogeneous consistency is achieved. Set aside.
Pour the previous preparation into a medium pot, add the thyme, and continue cooking for 10 minutes.
Serve the light carrot cream in a deep plate, garnish with sour cream and accompanied by croutons.
