Melt the butter in a saucepan over medium heat and sauté the shallot, leek, and garlic until softened and slightly colored. Add the curry and carrots, continue cooking until the carrots soften slightly, then add Silk® unsweetened almond milk, salt, and pepper. Cook on low heat for 15 minutes, let cool, and set aside.
