  • 2 tablespoons butter
  • 1/4 cups onion, finely chopped
  • 2 tablespoons garlic, Finely chopped
  • 2 cups peas
  • salt and pepper
  • 1 cup whipping cream
  • 3 cups chicken broth
  • 1 tablespoon butter
  • 1/2 cups bacon, in small cubes
  • 1 sprig spearmint
  • croutons
  • bacon, fried, in small cubes

  • Melt the butter in a skillet and sauté the onion, garlic, and peas for 3 minutes or until they start to change color.
  • Blend the peas with salt, pepper, heavy cream, and chicken broth until you achieve a smooth cream.
  • Melt butter, add the bacon, and fry for 3 minutes or until it turns golden. Pour in the pea cream and mint and cook for 10 minutes.
  • Serve the pea cream and garnish with croutons and bacon.
