Fish Soup (Cacciucco alla Livornese)

Rich soup with a delicate flavor. It is made with various fish and can be an excellent main dish.

  • 500 grams sole
  • 500 grams sea bass
  • 500 grams salmon
  • 500 grams red snapper
  • 500 grams mojarra fish
  • 5 cloves garlic
  • 1 green bell pepper, chopped and seedless
  • 1 red bell pepper, chopped and seedless
  • 5 tablespoons extra virgin olive oil
  • 1 1/2 kilos tomato, ripe, peeled, and chopped
  • 1 bottle dry white wine
  • 3 teaspoons sugar
  • 6 tablespoons parsley
  • 1 pinch saffron

  • Clean and wash the fish. Cut into large pieces.
  • In a large pot, sauté the garlic and peppers in oil. Add the tomatoes and cook until softened, then add the white wine, saffron, sugar, salt, and pepper, and let it simmer for half an hour.
  • Add the fish and cook for 10 to 20 minutes, being careful not to overcook.
