Ingredients

8 portions
  • 500 grams sole
  • 500 grams bass
  • 500 grams Salmon
  • 500 grams red snapper
  • 500 grams mojarra
  • 5 cloves garlic
  • 1 green bell pepper, cut and seedless
  • 1 red pepper, cut and seedless
  • 5 tablespoons extra virgin olive oil
  • 1 1/2 kilos tomtato, mature without skin and chopped
  • 1 bottle dry white wine
  • 3 teaspoons sugar
  • 6 tablespoons parsley
  • 1 pinch saffron

Preparation

The fish are cleaned and washed. They are cut into large pieces.
In a large pot brown the garlic and peppers in oil. Add the tomatoes and cook until they soften, then add the white wine, saffron, sugar, salt and pepper and let it cook for half an hour over low heat.
The fish is added and it is cooked for 10 to 20 minutes, taking care that it does not endures.

PRESENTATION

It is served very hot in deep plates, sprinkled with chopped parsley and served with toasted bread.

TIPS

You can use any type of fish that is fresh in the market.
