Preparation
The fish are cleaned and washed. They are cut into large pieces.
In a large pot brown the garlic and peppers in oil. Add the tomatoes and cook until they soften, then add the white wine, saffron, sugar, salt and pepper and let it cook for half an hour over low heat.
The fish is added and it is cooked for 10 to 20 minutes, taking care that it does not endures.
