Lentil Soup with Curry

This delicious lentil soup, a classic Indian recipe, has a touch of curry powder.

  • 2 tablespoons curry
  • 2 tablespoons olive oil
  • 4 carrots, peeled and chopped
  • 1 onion, finely chopped
  • 1 green apple, finely chopped
  • 1 clove garlic
  • 2 tablespoons curry powder
  • 1 tablespoon cumin powder
  • 400 grams lentils, previously rinsed
  • 5 cups water
  • 3 1/2 cups chicken broth
  • 1/4 cups fresh cilantro, chopped
  • 1/2 tablespoons salt
  • plain yogurt, for garnish

  • In a large pot, heat the oil over medium heat and sauté the carrots, onion, and apple. Cook for 10 minutes.
  • Add the garlic, curry, and cumin and cook for 1 minute.
  • Add the lentils, water, and chicken broth and continue cooking over medium heat until it boils.
  • Reduce the heat, cover the soup, and cook for 50 minutes or until the lentils are tender. Add the cilantro and salt.
  • Serve the soup accompanied by natural yogurt.
