2 tablespoons curry
2 tablespoons olive oil
4 carrots, peeled and chopped
1 onion, finely chopped
1 green apple, finely chopped
1 clove garlic
2 tablespoons curry powder
1 tablespoon cumin powder
400 grams lentils, previously rinsed
5 cups water
3 1/2 cups chicken broth
1/4 cups fresh cilantro, chopped
1/2 tablespoons salt
plain yogurt, for garnish

In a large pot, heat the oil over medium heat and sauté the carrots, onion, and apple. Cook for 10 minutes.
Add the garlic, curry, and cumin and cook for 1 minute.
Add the lentils, water, and chicken broth and continue cooking over medium heat until it boils.
Reduce the heat, cover the soup, and cook for 50 minutes or until the lentils are tender. Add the cilantro and salt.
Serve the soup accompanied by natural yogurt.
