This rich lentil soup, a classic Indian recipe, has a touch of curry powder.

Ingredients

5 servings
  • 2 spoonfuls of curry
  • 2 spoonfuls of olive oil
  • 4 pieces of carrot peeled and chopped
  • 1 piece of onion finely chopped
  • 1 piece of green apple finely chopped
  • 1 clove of garlic
  • 2 spoonfuls of curry powder
  • 1 tablespoon of cumin powder
  • 400 grams of lentil previously rinsed
  • 5 cups of Water
  • 3 1/2 cups of chicken soup
  • 1/4 of Cup of coriander chopped
  • 1/2 tablespoon of Salt
  • natural yoghurt To accompany

    Preparation

    In a large pot heat the oil over medium heat and brown the carrots, onion, and apple. cook for 10 minutes.
    Add the garlic, curry and cumin and cook for 1 minute.
    Add lentils, water and chicken broth and continue cooking over medium heat until it boils.
    Reduce the heat, cover the soup and cook for 50 minutes or until the lentils are tender. Add cilantro and salt.
    Serve the soup covered with natural yogurt.

    PRESENTATION

    Decorate the soup with coriander leaves.

    TIPS

    You can add 1 tablespoon of chopped fresh ginger to the soup to give it even more flavor.
