Butter Soup with Roasted Vegetables

  • 3 tablespoons butter
  • 2 carrots, peeled and sliced
  • 2 pumpkins, cut into slices
  • 1 cup corn kernels
  • 1 package La Moderna® Kids pasta, 200 gc / u of any figure
  • 2 liters chicken broth
  • 1 tablespoon parsley, chopped, plus four twigs to decorate
  • 1 tablespoon salt

  • In a small pot over medium heat, heat the butter and fry the vegetables for 5 minutes.
  • Add Kids La Moderna® pasta, chicken stock and chopped parsley. Let it boil, cover and cook for 9 to 11 minutes or until the pasta is al dente.
  • Season with salt and serve with parsley leaves.
