Ramen

Trying new things is always a good decision, especially when it comes to ramen, an Eastern dish consumed in China and Japan. Ramen consists of different types of noodles served with a broth made from meat, miso, and soy sauce. In addition to being full of flavor, ramen has a unique balance provided by its ingredients. Although there are various types of ramen depending on the region, it has been adapted in every country today.

  • 500 grams pork backbone
  • 1/2 cups seaweed, edible or Kombu
  • 1/2 cups water, to hydrate the seaweed
  • 2 cups Monteblanco® shiitake mushroom, for the broth
  • 8 cups water, for the broth
  • 2 chicken drumsticks, for the broth
  • 2 chicken thighs, for the broth
  • 250 grams smoked bacon, for the broth
  • 1 bunch green onion, (tails) for the broth
  • 2 carrots, peeled and sliced for the broth
  • 2 tablespoons garlic, finely chopped for the broth
  • 1/2 cups sake, to season the broth
  • 1/2 cups mirin (sweet rice wine), to season the broth
  • 1 cup soy sauce, to season the broth
  • 2 tablespoons sugar, to season the broth
  • 2 cups fideo pasta, Japanese style
  • eggs, cooked and cut in half, for presentation
  • 1 tablespoon green onion, finely chopped tails for presentation
  • Monteblanco® shiitake mushrooms, for presentation
  • naruto, for presentation
  • seaweed, edible or kombu for presentation
  • pork belly, for presentation

  • Place the pork bones on a tray, bake for 1 hour at 180 °C.
  • Soak the seaweed in a little water for 10 minutes. Strain and set aside.
  • In a small pot over low heat, cook Monteblanco® shiitake mushrooms for 30 minutes, remove the mushrooms and reserve the broth.
  • Add the pieces of chicken to the broth in which you cooked the mushrooms, cook over medium heat for 40 minutes, and remove the fat to have a clear broth. Once the chicken is cooked, remove from the broth.
  • Now add the pieces of pork and the smoked bacon to the broth, cook over low heat for 2 hours, remove the bacon, add the carrots, the onion tails, and garlic, and cook for 15 more minutes.
  • Remove the vegetables and bones using a strainer.
  • Add the sake, mirin, soy sauce, and sugar to the broth, cook for 15 minutes over medium heat, and remove from heat.
  • In a pot of boiling water, cook the noodles according to the package instructions. Drain and set aside.
  • In a bowl, serve the noodles, place the boiled egg, onion tails, Monteblanco® shiitake mushrooms, seaweed, naruto, and pork belly.
  • Serve the ramen broth and enjoy hot.
