Trying new things is always a good decision, especially if it is ramen, an oriental dish consumed in China and Japan. The ramen consists of different types of noodles served with a broth prepared with meat, miso and soy sauce. In addition to being full of flavor, the ramen has a unique balance that gives it the ingredients it carries. Although there are several varieties of ramen according to the region, today it has been tropicalized in each country.

  • 500 grams Spine of Pig
  • 1/2 cups seaweeds, Groceries or Kombu
  • 1/2 cups Water, to hydrate the algae

  • 2 chicken legs, for the broth
  • 2 chicken thighs, for the broth
  • 250 grams smoked bacon, for the broth
  • 1 bunch cambray onion, (tails) for the broth
  • 2 carrots, peeled and sliced, for the broth
  • 2 tablespoons garlic, finely chopped for the broth
  • 1/2 cups sake, to season the broth
  • 1/2 cups mirin (sweet rice vinegar), to season the broth
  • 1 cup soy sauce, to season the broth
  • 2 tablespoons sugar, to season the broth
  • 2 cups noodle pasta, japanese style
  • eggs, cooked cut in half, to present
  • 1 tablespoon cambray onion, finely chopped tails to present

Place the pork bones in a pan, bake for 1 hour at 180 ° C.
Hydrate the algae in a little water for 10 minutes. Cuela and reserve.
In a pot over low heat cook the Monteblanco® shiitake mushrooms for 30 minutes, remove the mushrooms and reserve the broth.
Add the chicken pieces to the broth in which you cooked the mushrooms, cook over medium heat for 40 minutes and remove the fat to have a broth without impurities. Once the chicken is cooked, remove from the clade.
Now add the pieces of pork and smoked bacon to the broth, cook over low heat for 2 hours, remove the bacon, add the carrots, onion tails, garlic and cook for 15 more minutes.
Remove the vegetables and bones with the help of a strainer.
Add the sake, the pee, the soy sauce, the sugar to the broth, cook for 15 minutes over medium heat and remove from the heat.
In a pot with boiling water, cook the noodles according to the instructions on the packaging. Drain and reserve.
Serve the noodles in a bowl, place the cooked egg, onion tails, Monteblanco® shiitake mushroom, seaweed, naruto and pork belly.
Serve the ramen broth and enjoy hot.
