Lentil Soup with Lemon

  • 1 cup lentils
  • 1 potato, peeled and diced
  • 1 cup celery, diced
  • 1 cup chard, chopped
  • 6 cups water
  • 2 tablespoons lime juice
  • 2 grams salt
  • 3 tablespoons vegetable oil
  • 1/4 cups fresh cilantro, chopped
  • 1/4 cups parsley, chopped
  • 1/2 teaspoons black pepper
  • 1/2 teaspoons cumin powder

  • Wash the lentils well, bring them to a boil in a pot with water for 35 minutes.
  • In another pot, heat the oil and add the black pepper and potatoes, fry for 2 minutes on high heat.
  • Add the celery and fry for one more minute.
  • Add all of this to the pot of lentils and let it cook for 10 minutes.
  • Add the Swiss chard, ground cumin, and lemon juice, cook on low heat for 10 more minutes.
  • Add the parsley, cilantro leaves, and salt. Serve hot.
