Tomato Gazpacho

A very rich and healthy option for first course. Gazpacho is a cold soup made with tomatoes, cucumber, peppers and garlic.

  • 1 kilo Roma tomato, chopped and seedless
  • 1 cucumber, large, peeled, chopped and seedless
  • 1 clove garlic, peeled and chopped
  • 1 orange bell pepper, seedless and chopped
  • 1/2 onions
  • 3 cups tomato juice
  • 2 tablespoons parsley, and fresh and chopped thyme
  • 1/4 cups red wine vinegar
  • 1/2 limes, (juice)
  • salt, and pepper to taste
  • 1 cup croutons, at your service

  • In a deep bowl, store 2 tablespoons chopped tomato, chopped cucumber and chopped pepper.
  • In a blender mix all the ingredients (do not add the croutons) and season with salt and pepper. Blend until a homogeneous mixture is obtained.
  • Cover and refrigerate for at least 2 hours before serving.
  • Serve decorating with the garnishes that were stored at the beginning and the croutons.
