Vegetable Soup for Weight Loss

  • 1/2 onions, chopped
  • 2 cloves garlic, chopped
  • 1/4 cups celery, chopped
  • 3 tablespoons water
  • 1/4 cups red bell pepper, roasted
  • 1 cup tomato, finely chopped
  • 1 cup green beans, cut in half
  • 1 cup carrot, cut into medium cubes
  • 1 cup spinach, cut into strips
  • 1 cup white cabbage, cut into strips
  • 6 cups vegetable broth
  • pinches salt
  • pepper
  • fresh oregano
  • fresh basil leaf
  • avocado, for serving

  • Add the onion, garlic, celery, and three tablespoons of water to a pot over low heat, then cover and cook for 3 minutes or until the vegetables soften. Uncover, add the roasted red bell pepper, the tomato, and cook for 2 minutes until the tomato changes color.
  • Add the spinach, cabbage, and vegetable broth. Cook for 15 minutes, season with salt, pepper, oregano, and basil. Remove the vegetable soup for weight loss from the heat.
  • Serve the weight loss soup and accompany with avocado.
