The chef Enrique Olvera started his journey in the kitchen at a very young age, thanks to his grandparents' bakery, where he developed his taste for Mexican cuisine from an early age. Believe it or not, Enrique Olvera did not always want to be a chef, and yet, he is currently one of the most famous Mexican chefs internationally, recognized for his career and passion for what he does. Just over a decade ago, he created a unique concept, Pujol, the name of his restaurant, which ranks 17th on the San Pellegrino list of the 50 best restaurants in the world. Enrique Olvera is a shy but perfectionist person who seeks to reinvent traditional Mexican recipes with the goal of updating them so they are not lost in history. One of his main activities is searching for new flavors and combinations with which he can experiment when creating a dish. This is why he does not enjoy baking; he prefers to play with ingredients rather than measure them exactly as the recipe requires. “Well done is good” and Enrique Olvera is a clear example of this, and one of the reasons why Sidral Mundet chose the Mexican chef as a success story, highlighting his passion and culinary art in experimenting with food and creating original Mexican dishes.
