According to scientists, this reaction is a form of defense of the fruit, but it does not mean that it is inedible; it simply changes its appearance. To avoid this reaction, there are some tricks that can delay the oxidation process. 1. One of the most common tips is to use lemon juice to prevent the peeled or cut avocado from turning black. The avocado is usually rubbed with juice or directly with lemon on the entire surface of the fruit's flesh exposed to the air. Now, if for example we made guacamole, it is recommended to add lemon juice. And in both cases, it is advisable to wrap the fruit or the container with the guacamole in transparent plastic, ensuring it adheres completely to the surface that is prone to oxidizing. Thanks to this action, the color of the avocado can be preserved for two to three days in the refrigerator at a temperature of about 4 degrees Celsius. 2. Another method used to prevent the avocado from oxidizing, which some restaurants use or when preparing dishes with pre-prepared ingredients, is to immerse it in cold water, as this also limits contact with oxygen. 3. This third option is a technique that can alter the flavor of the avocado (lemon does this too) and should only be done when the avocado is intended for a recipe that will contain onion, because it is the onion that best preserves the avocado from oxidation. To do this, slice a red onion into julienne, place it in a container, and place the avocado on top without letting the flesh touch the onion, then cover the container.
