While we love Mexican snacks, there are also national chefs who decide to take our cuisine further. The following five have gained international recognition as the best that the Aztec land has to offer in the realm of fine dining.
The following establishments are featured on the list of the top 50 in Latin America, and the first two even make it to the list of the top 50 in the world. It is definitely worth getting to know them. We present to you the best restaurants in Mexico City.
1.- Pujol
From chef Enrique Olvera, Pujol is on the list of the best 50 restaurants in the world according to the prestigious S. Pellegrino’s World’s 50 Best list. Its blend of 100% local ingredients, pre-Hispanic techniques, and ultra-minimalist presentation has earned it recognition from the best chefs on the planet.
Recommended dish: Mole madre.
2.- Biko
The chefs at this establishment may not be Mexican, but they are Spanish. However, after more than 15 years in Mexico City, they have learned from local produce and cook to elevate the name of the Mexican capital. Mikel Alonso and Bruno Oteiza are masters of modern cuisine, and both their evolving menu with their original creations and their traditional option with typical Basque dishes are a delight to the palate.
Recommended dish: Cabrilla with pipián verde.
3.- Pangea
Representing the northern part of the country, this place located in Monterrey never ceases to amaze. Here, fusion techniques are used to pay tribute to the ingredients of Nuevo León and other states of the republic. Its chef, Guillermo González, believes in the philosophy of unaltered food and unhidden flavors; he thinks it is more important to let the natural taste shine.
Recommended dish: Roasted tomato cream with brie cheese and pesto.
4.- Quintonil
Of all the restaurants on the list, this is the youngest, but its chef studied alongside Enrique Olvera at Pujol, so its menu is also created based on Mexican market food. From starters to desserts, the dishes here have an artistic aesthetic and are only surpassed by the perfect combination of flavors.
Recommended dish: Octopus in its ink with potatoes and Valladolid sausage.
5.- Merotoro
This last restaurant is located in the famous Condesa area of Mexico City, but its inspiration comes from the land and sea products of Ensenada. Here, everything pairs well with a good wine, and each dish is fresher than the last. It is an ideal place to put yourself in the hands of your waiter and let them recommend since the menu can change daily.
Recommended dish: Short rib with polenta.
