We don't say we don't like them; in fact, many of them can be very tasty, but the truth is they are not exactly Mexican. The confusion may arise because they were created near the border between Mexico and the United States, or because the creators use Aztec ingredients. But whatever the case, today we want to make it clear that these dishes are not Mexican, but TEX-MEX.
Fajitas
This combination of meat or chicken with sautéed vegetables is served with beans and red rice, but the truth is it is more of a Texan dish than anything else. In traditional Mexican cuisine, the closest thing might be a molcajete, but even then, the difference is enormous. Beyond its origin, delicious fajitas are always welcome if you’re looking to share with family and let everyone prepare their taco as they wish.
Nachos
In Mexico, we serve totopos as an appetizer, perhaps with salsa if anything, but the invention of those fried tortillas with cheese, beans, sour cream, and jalapeño peppers did not occur on this side of the Río Bravo. This typical game day appetizer is much more famous in other parts of the world like the United States and Europe than in Mexico itself, although it must be said that they are not bad at all.
Burritos
This dish is a bit more debatable since it was invented in Mexico during the time of the Revolution, aimed at being a healthy and filling food for soldiers. We include it on the list because although it was created on this side, the burrito is one of the pillars of Tex-Mex cuisine and a favorite of Americans. Eating burritos in Mexico, beyond the north of the country, is not very common, to say the least.
Chimichangas
A close relative of the burrito, only fried and smothered in sauce, is the chimichanga, and that one definitely did not come from Mexico. It is usually a monstrous dish due to its size that, we can't deny, does appeal when we are starving and looking for something hearty and filling. This dish is very famous in the southeastern United States and is highly sought after in various restaurants, unlike in Mexico.
Chili
There is a little confusion because although it is a dish with black beans and peppers, it does not mean that it is Mexican. This specialty from the southern United States was invented in Texas and is an excellent dish for sharing with family. It is very rich as it is warm, a bit spicy but also somewhat sweet due to the use of tomatoes. It is sumptuous because of the meat and beans and pairs well with a touch of sour cream and a little green onion.
