Lentils are a food with a high concentration of nutrients. Their plant-based proteins, although present in good quantity, are incomplete because they are deficient in methionine (an essential amino acid). However, when lentils are combined with cereals like rice, which are rich in this amino acid, they become high biological value proteins, comparable to those provided by animal-origin foods. The lipid content is very low. The fiber contribution, although important, is also lower than that of other legumes. (

- 4 Cups of Chopped Onion
- 4 Cups of Chopped Leek (only the white part)
- 1 Tablespoon of Chopped Garlic
- 1/4 Cup of Olive Oil
- 1 Tablespoon of Salt
- 1 1/2 Teaspoon of Pepper
- 1 Tablespoon of Fresh Thyme
- 1 Teaspoon of Ground Cumin
- 3 Cups of Chopped Celery
- 1/4 Cup of Tomato Puree
- 5 1/2 Liters of Chicken Broth
- 2 Tablespoons of Red Wine Vinegar or Red Wine
- Grated Parmesan Cheese
- 3 Cups of Peeled and Chopped Carrots
