A gluten-free diet is a diet that excludes this protein by avoiding certain types of foods such as cereals: wheat, barley, and rye. A gluten-free diet is followed by people who suffer from celiac disease. Gluten causes inflammation in the small intestine for people who are celiac. Therefore, following this diet helps individuals control their signs and symptoms to prevent any complications. At first, following a gluten-free diet may seem complicated, but we must be patient and get used to changing our diet, and currently, we can find more options for products that do not contain gluten. Facing dietary change can be a radical shift in our lifestyle; however, it is essential to maintain a positive attitude and learn which foods can be consumed. Nowadays, companies have become concerned about the increase in the number of people with celiac disease and have released gluten-free products such as bread and pasta. If you are just starting a gluten-free diet, do not worry too much; you can consult with an expert in the field, such as a nutritionist, to support you and give you advice on how to follow your diet better and ensure it is balanced.  

Foods you can eat:

  • - Beans, seeds, nuts (unprocessed)
  • - Fresh eggs
  • - Fresh meats, fish, poultry (all without breading or batter)
  • - Fruits and vegetables
  • - Dairy products (most products)
When buying your food, it is crucial to check if they are processed, and if so, ensure they do not contain gluten, additives, or preservatives. You can also consume some grains like flaxseed, amaranth, gluten-free flours (rice, soy, corn, potato, or bean), cornmeal, quinoa, soy, rice, tapioca, etc.  

Foods and beverages to always avoid:

  • - Barley (malt)
  • - Rye
  • - Wheat
Perhaps one of the most challenging foods to avoid is wheat, as there are numerous products containing this ingredient, such as wheat flour and its derivatives.  

Foods to avoid that may be gluten-free:

Some of these products can be found in supermarkets either with gluten or gluten-free, so read the labels carefully before purchasing them.

  • - Sauces
  • - Pastas
  • - Dressings
  • - Soups and soup bases
  Oats are not always recommended for consumption, as they can sometimes be contaminated with wheat during cultivation or processing. Some medications or vitamins also use gluten as a binding agent, so it is better to avoid them. Also, be careful with cross-contamination, as some gluten-free foods may come into contact with those that contain gluten, making them not advisable. Common surfaces or utensils may also be used, which, even if cleaned, can contaminate the food. People with celiac disease must adhere to a strict gluten-free diet for the rest of their lives.
