The cold season begins, and with it come the coats, sweaters, hats, gloves, and other accessories to combat the weather. Additionally, many recipes to fight the cold start to be prepared, including hot drinks and the desserts that accompany them. Here we leave you the recipe for a delicious spice and apple cake, ideal for Christmas or autumn festivities, contributed by our chef Diana Gonzalez. The cake is infused with cinnamon, clove, nutmeg, and ginger.

Ingredients

2 Cups of Flour
1 Tablespoon of Baking powder
1/2 Cup of Raisins or cranberries
3 Tablespoons of Rum
1/2 Teaspoon of Baking soda
1 Tablespoon of Allspice
1 Tablespoon of Cinnamon
1 Tablespoon of Nutmeg
1/4 Teaspoon of Clove
1/2 Teaspoon of Salt
1 Cup of Brown sugar
1 Cup of Sugar
2 Sticks of Butter
3 Pieces of Eggs
1 Tablespoon of Vanilla extract
3 Pieces of Peeled apples, cut into small cubes
1 Cup of Chopped walnuts
1/3 Cup of Chopped crystallized ginger
Powdered sugar for decoration

Preparation method

In a deep bowl, soak the raisins in the rum for 1 hour or until plump.
Preheat the oven to 180 degrees Celsius. Prepare a round cake pan with butter and flour.
In an electric mixer, combine the flour, baking powder, baking soda, and spices. Add the sugars, butter, eggs, and vanilla and continue mixing.
Add the apples, walnuts, ginger, and raisins.
Pour the mixture into the baking pan and bake until a toothpick inserted comes out clean (about 1 hour).
Remove the cake from the oven and allow it to cool before removing from the pan.

Tips This cake can be made up to 3 days in advance; just store it at room temperature covered in wax paper. Presentation Just before serving, decorate with powdered sugar.
