How to achieve golden fried potatoes

Many times when we fry potatoes, especially the famous French fries, they don't turn out like when we order them at a restaurant, crispy or golden.
If we want to achieve golden fried potatoes, we must first peel them and cut them into the desired shape. Then we take them and place them in a colander, letting them sit under a stream of cold water.
After stirring and washing them under the water, we drain them very well and place them on paper towels to dry for a moment.
When we are ready to fry them, we add them to a pan with oil that has been preheated over medium heat. We let them cook for a few minutes to cook through, and as they cook, we gradually increase the heat to make them golden and crispy.
