To preserve the nutrients in vegetables, they should simply be steamed.
To do this, place a pot of water on the stove and bring it to a boil, then place a colander over it and add the vegetables to the colander.
Cover with the pot lid and let cook until the vegetables are tender; this will take longer to cook, but it makes the vegetables crisper and full of all their nutrients.
On the contrary, when boiling them, all the nutrients are lost and the vegetables lose their consistency, flavor, and color.
