A true Mexican makes a good green salsa to top chicken patties, green chilaquiles, Swiss enchiladas and much more; however, it's common for the salsa to turn out bitter. Here we tell you how to remove the bitterness with the best cooking tips!

Green salsa is a staple in Mexican cuisine, but not everyone knows how to prepare it correctly, as the bitter taste is often present. At kiwilimón, we share seven tips to prepare a delicious and non-bitter green salsa.

1. Choose ripe tomatoes

To ensure your green salsa doesn't turn out bitter or acidic, the most important thing is to use ripe green tomatoes or tomatillos. Remember that less ripe tomatoes can add a more acidic and bitter taste to the salsa. Make sure they have a deep green color!

2. Add baking soda

This is the kitchen tip that never fails! If your green salsa tastes bitter or acidic, just add a teaspoon of baking soda to the finished salsa or to the pot where you're boiling the tomatoes. Try it out and let us know if it worked!

3. Roast the ingredients

If you want to add an even more delicious and slightly smoky flavor to your green salsa, don't forget to roast the tomatoes and chilies on a griddle. This not only browns them but also reduces acidity and adds a delicious flavor to your enchiladas and chilaquiles.

4. Remove the seeds

When your green salsa turns out bitter, it's not always the tomatoes' fault; the chilies could also be the culprits. To avoid this unpleasant taste, chefs recommend removing the seeds from the chilies. This will also help ensure the salsa isn't too spicy.

5. Add a touch of sweetness

Another good tip to remove the bitterness from green salsa is to add a touch of sugar. Bring it to a boil and add a teaspoon of sugar, let it dissolve, and taste the salsa. However, add the sugar gradually so as not to alter the flavor.

6. Wash the tomatoes well

We know that often we wash fruits and vegetables quickly because we don't have time. Nevertheless, it's essential to wash the tomatillos very well to remove the sticky texture and dirt that clings to them. This step is key to ensuring the flavor of your green salsa!

7. Add other ingredients

If you feel that the other tips couldn't rescue your green salsa, then add a good bunch of cilantro, a tomato, or a bit of avocado to help mask that bitter taste.

With these tips from kiwilimón, preparing the perfect green salsa will be a piece of cake! Now you know, it's time to get to work and enjoy the best of Mexican cuisine with our recipes. Enjoy!
