Ingredients

24 portions
  • 3 eggs
  • 150 grams sugar
  • 4 tablespoons milk
  • 2 tablespoons lemon juice
  • 200 grams flour
  • 2 teaspoons Rexal® Baking Powder
  • 1 tablespoon lemon zest
  • 1 tablespoon liquid vanilla
  • 60 grams butter, melted
  • 150 grams dark chocolate, molten
  • 1 cup chocolate, melted to cover the madeleine
  • 1/4 cups walnut, finely chopped

Preparation

Preheat the oven to 220 °C.(428°F)
In a bowl beat eggs with sugar and add milk, lemon juice, flour, Rexal® baking powder, lemon zest and vanilla essence.
Mix the butter with the melted chocolate, and add little by little to the previous mixture, beat until incorporated.
Pour the mixture over a madelein mold previously greased and floured and bake for 6 minutes. Let it cool.
Remove from mold and cover one end of the madeleine with melted chocolate, sprinkle with walnut and let dry. Serve with milk

PRESENTATION

On an extended dish, accompanied by a glass of cold milk.

TIPS

The temperature of the oven is very important to have a soft and compact consistency in your madeleines.
