Ingredients

12 portions
  • 4 cups flour
  • 3/4 cups sugar
  • 11 grams dry yeast
  • 1 egg
  • 1 cup milk
  • 1/2 teaspoons salt
  • 1/4 cups butter, at room temperature (45 grams)
  • 1 tablespoon Orange zest
  • 2 cups oil
  • enough custard cream, to fill
  • enough Hazelnut cream, to fill
  • enough powdered sugar, to decorate

Preparation

Beat the flour, sugar and yeast, mix until integrated. Add the egg and milk, and knead until a homogeneous mass.
Add the butter, orange zest and knead until a smooth dough. Rest until doubled in a bowl covered with non-stick plastic.
On a floured table or surface, spread the dough approximately 5 mm thick and with the help of a round cutter cut circles and place on a tray, let stand for 15 minutes.
In a saucepan, heat the oil over medium heat and fry the Berliners, approximately 4 minutes on each side; Place on absorbent paper and cool.
With the help of a pastry bag and duya, fill the Berliners with custard, hazelnut cream or the filling of your choice, decorate with refined sugar.

TIPS

Hydrate the yeast with the milk so that it integrates perfectly well with the dough and ferments faster.
