Preparation
Position the grid of your oven in the center and preheat the oven to 200 degrees Celsius.
Grease two refractory souffles for souffle or individual gratin (like the one in the photograph).
Break two eggs and pour in each refractory (careful not to break the yolk).
Season with salt and pepper and sprinkle with green onions. Spoon the jocoque over the eggs.
Bake until the eggs begin to bubble and the edges are lightly browned (about 5 minutes). Remove from oven and serve.
