Ingredients: 2 cups water; 6 guajillo chiles, clean; 1/4 onions; 2 cloves garlic; 1 tablespoon oregano; 1/2 tablespoons cumin seeds; salt; pepper; 1 tablespoon vegetable oil; 1 cup potato, peeled, cubed, precooked; 1 cup carrot, peeled, cubed; corn tortillas; vegetable oil, for frying; 600 grams chicken breast, cooked and shredded; onion, finely chopped, for decoration; panela cheese, for decoration, grated

In a small pot with boiling water, cook the guajillo chiles, onion, and garlic for 5 minutes, until hydrated. Blend the chiles, onion, and garlic with the oregano, cumin, and a bit of the water from cooking the chiles. Then cook the blended mixture over low-medium heat in a skillet for 8 minutes, until you have a semi-thick sauce. Season with salt and pepper. Set aside.
