Poach the eggs for about 3 minutes; to do this, break them into hot water with a splash of vinegar. Quickly swirl the water, and when a whirlpool is formed, add the eggs slowly. Remove the eggs from the pot by quickly immersing them in another container with very cold water and a little salt. This will help stop the cooking, ensuring that the egg yolk remains liquid and does not coagulate. Fry the slices of ham on both sides. On a plate, place the slice of ham and put the egg on top.
