Ingredients: 2 onions, finely chopped; 1 tomato; 2 cans tuna; 1 tablespoon vegetable oil; 1 bell pepper, green or red; 1 clove garlic; 1 dash white wine; 5 eggs; 1 avocado

Prepare a sofrito by sautéing 2 onions, 1 bell pepper, and 1 julienned garlic clove in olive oil. Let it cook until translucent. If needed, add a splash of white wine to prevent it from drying out. Season with salt and pepper, add 1 diced tomato, and 2 cans of tuna. Let it cook for five minutes. Cool for a while, mix with 5 eggs, and prepare the tortilla in a good iron or non-stick pan, heating a drizzle of olive oil and pouring in the mixture. Cover and let cook on low heat until it starts to set.
