Preparation
Cut the tips and stems of the figs and cut them into quarters.
In a pot cook the figs over medium heat for 15 minutes and with a fork or crusher, crush them to make a puree while cooking.
When they start to take a much darker color add sugar, stir well.
Add the wine and lemon and continue stirring. Cook for 5 more minutes over medium heat.
Package in an airtight glass container while still hot. Put in the refrigerator and when it cools it pasteurizes itself.
