If you like Mexican appetizers, this trilogy of sopes is what you're looking for. You do not need many ingredients other than corn dough, beans and fillings that you have at hand, accompany them with salsita.

Ingredients

12 portions
  • 500 grams bean
  • 1 liter Water
  • 1/4 onions
  • 1 clove garlic
  • 1 tablespoon salt
  • 250 grams corn dough
  • to taste Water
  • 1/4 cups oil, for sopes and beans
  • 1 cup potato, with chorizo
  • 1 cup chicken, cooked and shredded
  • 1 cup cochinita pibil
  • 1 1/2 cups lettuce, chopped
  • 1 cup cream, Acid
  • 1 cup fresh cheese
  • to taste green sauce, for potato sopes with chorizo
  • to taste red sauce, for chicken sopes
  • to taste red onion, with habanero for cochinita sopes

Preparation

Cook the beans in the express pot with water, onion, garlic and salt for 30 minutes. Drain and reserve.
Knead the dough with water, making sure it is moist and does not stick to your hands.
Form gorditas or thick tortillas with the dough with the help of a press for tortillas or pressing between two bags with a chopping board.
Heat a comal and cook the gorditas on both sides.
With your hands pinch the sopes on the edges to form the edges.
Heat the oil in a pan over medium heat and fry the sopes for 2 minutes.
In the same pan fry the beans with the rest of the oil, crushing to undo them.
Fill the sopes with beans, different fillings, lettuce, cream, cheese and their respective sauce.

PRESENTATION

Serve with cream, cheese and sauce.

TIPS

You should make the edges of the sopes still hot, use a paper napkin to not burn yourself.
