Enchiladas Suizas Picositas

If you know Mexican cuisine, you know the Swiss enchiladas! Corn tortillas stuffed with chicken and dipped in a creamy green sauce and picosita topped cheese gratin on top, do not stop doing them!

Ingredients

  • 1 kilo of green tomato washed, disinfected and dried (for sauce)
  • 5 pieces of chile serrano (for the sauce)
  • 1/4 of piece of onion (for the sauce)
  • 1 tooth of Garlic (for the sauce)
  • 1 twig of fresh cilantro washed, disinfected and dry (for sauce)
  • 1 Cup of sour cream (for the sauce)
  • 1/4 of Cup of chicken soup (for the sauce)
  • 3 spoonfuls of oil a spoonful for the sauce and two tablespoons for the enchiladas
  • 1 pinch of Salt
  • 1 pinch of Pepper
  • 8 pieces of Corn tortillas for enchiladas
  • 2 pieces of chicken breast cooked and uncooked, for enchiladas
  • 1 Cup of Manchego cheese grated, to decorate

    Preparation

    Preheat the oven to 200 ° C.
    For the sauce, boil the tomatoes and chilies until the tomatoes are cooked.
    Blend tomatoes and chiles with onion, garlic, cilantro, cream and chicken broth.
    In a medium saucepan, heat a tablespoon of oil and fry the sauce for 5 minutes over low heat. Season and reserve.
    In a pan, heat the rest of the oil and roll the tortillas on both sides a minute to soften. Drain
    Fill the tortillas with the chicken. Arrange in a refractory and bathe with sauce and cheese.
    Gratin in the oven 5 minutes. It serves.

    PRESENTATION
