Fry the chopped onion and garlic in the oil. After a few minutes, add the huitlacoche (cleaned and chopped) and the epazote sprig. Season with salt and pepper and let it cook on low heat for a few minutes. Melt the 50 grams of butter in a skillet and whisk the eggs. Pour the beaten eggs into the skillet and cook until tender. Place the huitlacoche filling in the center, fold it in half, and set aside (it will be topped with a sauce before serving).
