  • 80 grams boneless chicken breast, and without skin
  • 2 tomatoes
  • 2 guajillo chilies
  • 1 Chile de árbol pepper
  • 1 onion
  • 2 cloves garlic
  • 8 corn tortillas
  • 2 tablespoons cream
  • 1 branch epazote
  • 1 branch fresh coriander
  • 1/2 cups vegetal oil
  • black pepper, to taste
  • salt, to taste


Clean 80 gr (2.8 ounces)of chicken breast, which has neither skin nor bones and place it in a saucepan. Cover the chicken breast with water and add 1/2 onion, 1 clove of garlic and salt to taste. Boil the water over high heat, cover the pan and let the chicken cook in the boiling water for 20 minutes.
Cut 8 corn tortillas into triangles, and when finished, set aside. Pour approximately 1/2 cup of vegetable oil into a pan, so that there is a layer of oil about 2 cm (About 3/4ths of an inch) high. Heat the oil to 180 º C (356F). Put as many of the tortilla triangles that fit into the pan and fry for about 2 minutes, until golden brown; Move them regularly with a kitchen utensil. Transfer the tortilla triangles (fried tortilla chips) to paper towels for drying. Repeat the 2 previous steps with the remaining tortilla triangles, until finished.
For the red sauce, remove the seeds and veins of 2 guajillo chiles and 1 chile de árbol. Put the chiles in a saucepan, also add 2 tomatoes. Cover these ingredients with water and boil over high heat. Let the ingredients cook in the boiling water for about 4 minutes, until the peppers soften. Transfer the chilies and tomatoes to a blender, also add 1/4 onion, 1 clove of garlic, pepper to taste. Blend these ingredients well, until done. Check that the chicken is well cooked, its color should be white on the outside and inside. If not, cook it for longer. Remove the chicken from the saucepan and if completely cooked, shred it.
Heat in the saucepan over medium heat 1 tablespoon of vegetable oil. Put the sauce that was prepared in the saucepan, 1 epazote branch and salt to taste. Mix the ingredients and boil the sauce over high heat. When it boils reduce to medium heat and cook the sauce for about 3 minutes more, until it thickens a little; stir occasionally. Reduce heat to low, add the the fried tortilla chips to the pan and try to mix them with the sauce (but do not break them). Cook the tortilla chips for about 3 minutes, until the sauce has a very thick consistency; stir occasionally. When you finish, set aside.
To decorate, finely chop 1/4 onion and 1 sprig of coriander; set aside. Remove the epazote that was added to chilaquiles. Serve the chilaquiles and add 2 tablespoons of cream, the onion that has been chopped, sprinkle 2 tablespoons of fresh ground cheese and the cilantro that was chopped previously.


You can make a sauce and add it.


For better flavor do not let the tototpos toast too much.

Le doy 1 estrella por qué quería comer chilaquiles me salió bien pero me dio diarrea extrema que hasta volé del baño a mi cuarto estuve haci un mes me sentí como Superman volando por los aires les enseñe a los pájaros a volar pero ya se me acabó quisiera hacer los chilaquiles para seguir mi sueño de volar 😞😞😞😍
