Preparation
Cook the meat with water, 2 cloves of garlic and onion. When this list crumble it.
The dough is beaten with the cooking broth of the meat until it is fluffy. Apart beat the butter and add it to the dough together with the baking powder and salt to taste.
Soak the tamal leaves in cold water and drain them.
Filling: Fry the meat in the lard, add the potatoes, the olives. Grind the chili with the garlic, cumin, salt and pepper and then strain. Add the sauce to the meat and rectify seasoning.
Put dough with a spoon on each sheet, then a little of the stuffing, some slices of chili and finally wrap and tie the tamale.
Repeat the process with all the sheets.
Put the tamales in a steamer for about 45 minutes. or until they come off the sheet.
