This recipe is very Mexican, it has eggs, beans and old cheese .. it is very rich.

Ingredients

2 servings
  • 3 pieces of egg
  • 1 Cup of bean crushed
  • 1 piece of potato big
  • 1 Cup of tomato puree
  • to taste of cheese
  • Salt
  • 3 pieces of crepe bought or made at home

    Preparation

    Prepare the crepes and reserve. (3 crepes) Chop the potato into squares and cook it in a pan with little oil until it is golden brown and well cooked.
    Boil the beans with a little water (not too thick or watery).
    When the potato is ready, beat the eggs and drain them into the frying pan with the potato until it is cooked.
    Then empty the beans with the eggs. Allow to warm for 5min. and remove from heat. Put a little of the egg mixture in a crepe and roll it up as a taco (it does not matter if it is too full.) Do the same with the other crepes.
    In a saucepan, heat the tomato puree over medium heat for 5 minutes. Finally pour the puree into the crepes and grate cheese to taste.
