For your breakfasts try these Motuleños eggs with a spicy habanero sauce, accompanied by all the flavor of Virginia Ham de Pavo Zwan®, gluten-free and with very thin slices. Perfect for a complete breakfast, different and full of flavor.

Ingredients

4 portions
  • 2 tomatoes, for the sauce
  • 2 cloves garlic, for the sauce
  • 2 habanero peppers, for the sauce
  • 2 tablespoons vegetal oil, for the sauce
  • 1/2 cups onion, finely chopped, for the sauce
  • 3 tomatoes, in small cubes, for the sauce
  • to taste salt, for the sauce
  • to taste black pepper, ground, for the sauce
  • 1 package Zwan® virginia turkey ham, 150 g
  • enough vegetal oil, to fry
  • 12 corn tortillas
  • 12 eggs
  • to taste salt
  • to taste black pepper
  • 1 cup refried beans
  • 1 cup pea, Cooked
  • 1/2 cups Cotija cheese, fallen apart
  • to taste plantain, fried, sliced, for garnish

Preparation

For the sauce, on a comal roast the tomatoes together with the garlic until they begin to have a dark tone. Add the habanero peppers and grill, stirring constantly, it is important to do it over low heat so that the chili does not burst. Blend the ingredients and reserve.
Pour some vegetable oil into a hot saucepan and sauté the onion until it is bright. Add the tomato and cook over medium low heat for 5 minutes. Pour in the sauce, season with salt and pepper, and cook for 8 more minutes. Add the cooked peas and remove from the heat. Reserve hot.
On a short board, the Zwan® Virginia Turkey Ham in medium squares of approximately 1.5 x 1.5 cm. Reserve until use.
Fry the tortillas on both sides in a pan with hot vegetable oil, they should be lightly toasted. Drain on absorbent paper and reserve hot.
In the same pan as the tortillas, fry the eggs. Break the egg and let it fall gently on the hot pan, lower the heat to cook the white little by little. Season with salt and pepper and keep on the fire until the yolk is firm; remove with the help of a spatula.
Serve on a plate, first place two or three pieces of fried tortillas, add refried beans on each tortilla and place the eggs on top. Bathe with the hot habanero sauce, add Zwan® Turkey Ham Virginia, cooked peas and Cotija cheese to taste. Accompany with slices of fried plantain.

PRESENTATION

Add Cotija or aged cheese to taste when serving. Accompany with slices of plantain and fresh coffee.

TIPS

Use the tortillas from the day before, as they absorb less oil and take less time to fry.
