Prepare these delicious Potato and Spicy Sausage Bean Enchiladas​​ for your next breakfast. This Mexican recipe is a classic. Ingredients

3 servings
  • 2 cups of sausage
  • 1/2 Cup of red onion finely chopped
  • 1 Cup of potato cooked and cut in cubes
  • 1 Cup of bacon for the sauce
  • 1 Cup of onion in quarters, for the sauce
  • 2 cloves of garlic for the sauce
  • 1 Cup of pinto beans cooked, for sauce
  • 5 chile de árbol peppers dry, for the sauce
  • 1/4 of Cup of epazote for the sauce
  • 1 tablespoon of oregano for the sauce
  • 1/4 of teaspoonful of allspices for the sauce
  • 1 Cup of beans soup for the sauce
  • 1 Cup of whipping cream for the sauce
  • 1 pinch of Salt
  • enough of vegetable oil
  • 9 Corn tortillas
  • enough of sour cream to serve
  • enough of fresh cheese to serve
  • enough of red onion to serve
  • enough of fresh coriander to serve

Preparation

For the filling, heat a pan over medium heat and cook the sausage ​​until it browns and release the fat, add the onion and cook a few minutes moving constantly. Add the potato and cook for 3 minutes, season and reserve.
Heat a frying pan over medium heat and cook the bacon until releases the fat, add the onion, garlic, beans, the chile de árbol, the epazote, the oregano, the whole pepper and cook for 5 minutes. Add the bean broth and cook for 15 minutes, remove from heat and cool slightly. Blend with the whipping cream season with salt and set aside.
Fry the tortillas with hot oil until they soft, remove the excess fat with an absorbent paper towel. Fill them with the potato and spicy sausage, fold like enchiladas.
Serve in dishes and cover with the bean sauce and accompany with the sour cream, queso fresco, purple onion and fresh cilantro. Enjoy.

PRESENTATION

Serve with purple onion, queso fresco and cream.

TIPS

If you don't have cooked beans, use canned re-fried beans and blend them with chicken broth for the sauce.
