Ingredients: 1 bunch spinach; 1 bell pepper, in julienne; 4 eggs; 3 tablespoons olive oil; 1 tablespoon pine nuts; 1 pinch salt, to taste; 1 pinch pepper, to taste; 4 leaves romaine lettuce

Wash the spinach, chop it, and sauté it in a pan with olive oil for five minutes, until well cooked. Place the eggs in a small deep pot with water. Bring them to a boil. Count ten minutes from the time it starts boiling. Turn off the heat, let them cool, and peel them.
