Ingredients: 1 1/2 kilos beef tenderloin; 500 grams puff pastry, thawed; 2/3 cups chicken liver pate; 1 egg; 2 tablespoons butter; 2 tablespoons vegetable oil; 1/4 cups shallot, finely chopped; 1 1/2 cups button mushrooms, finely chopped; 1 tablespoon fresh parsley, chopped; whole-wheat pasta, FOR THE SAUCE; 6 cups beef broth, homemade or store-bought; 1 cup Madeira, port wine; 2 tablespoons unsalted butter; pepper, to taste

Preparation

Start by preparing the mushroom filling: In a medium skillet, heat the butter and 1 tablespoon of oil. Sauté the shallots for 5 minutes, add the mushrooms, and cook for 15 minutes. Season with parsley, salt, and pepper and remove from heat. Remove the beef fillet at least 1 hour before cooking. Pat it dry and season with salt and pepper.
