Cut the meat into medium pieces and cook for 2 hours in water, with salt, pepper, and bay leaf. Once the meat is cooked, reserve the broth and shred the meat. Slice the onion into half-moons (as thin as possible), and place it in 1/2 liter of water with the juice of 1 lemon for 15 minutes. Strain and set aside. Meanwhile, cut the carrots, potatoes, zucchini, and green beans into julienne strips; blanch them in boiling water (2 to 3 minutes maximum) until they are crunchy, and set aside.
